Wild Violet Jelly
Our 2022 wild violet jelly. Every spring I pick violets around the farm until I can’t anymore. I steep them in water to make a violet ‘tea’. This tea is combine with pectin (from apples), lemon juice, and sugar and cooked until just the right point.
The result is a spreadable, brilliantly violet jelly that smells floral, but tastes almost like grape jelly. It is unforgettable and really captures the essence of spring in a jar.
Our floral jellies last 1 month from opening in the refrigerator. And if unopened, can be stored in dark spot in your pantry for a year.
